Genesis
Boil onions until tender (may also be cooked in pressure cooker for 3 minutes). Drain. Sauté onions in 4 tablespoons butter. Beat eggs and milk together and add onions, one half of the Ritz cracker crumbs, cheese, salt and pepper.
Bake in a buttered casserole dish at 375 degrees for 35 minutes. Melt the other 3 Tablespoons butter and add the other half of the crushed Ritz cracker crumbs. Top casserole with this mixture and bake 15 minutes longer.
Serves 6.
