Ingredients:
Heat olive oil in 3 qt. sauce pan. Saute onion and pepper for 3-5 min. Add remaining ingredients. Bring to boil. Cover. Simmer on low for 30 min. Let stand 5 min. Serve.
Serves 6-8.
Leftovers: Add a little balsamic vinegar to room temperature leftovers and serve as a rice salad for lunch.
