Spanish Rice Printable Version of this Recipe


Sailing Vessel Pelikan VIRecipe from Jim Robinson, S/V Pelikan VI


  • 1 Spanish or yellow onion, chopped
  • 1 green bell pepper, chopped
  • 1 cup Basmati rice
  • 1 28 oz can diced tomatoes
  • 2/3 cup water
  • 1 tsp. chili powder
  • 1 tsp. salt
  • 1 tsp. cumin
  • 1 tbsp. Worstershire sauce
  • 2 tbsp. brown sugar
  • 2 tbsp. olive oil
  • hot sauce to taste

Heat olive oil in 3 qt. sauce pan.  Saute onion and pepper for 3-5 min.  Add remaining ingredients.  Bring to boil.  Cover.  Simmer on low for 30 min.  Let stand 5 min.  Serve.

Serves 6-8.  

Leftovers:  Add a little balsamic vinegar to room temperature leftovers and serve as a rice salad for lunch.
