Side note from editor: I make this myself, but have never added sugar as I find the coconut milk sweet enough for me. It's great alongside chicken.
Rinse rice. In a heavy medium saucepan, combine with water, sugar, salt, and coconut milk. Bring to a boil, then reduce heat to low and simmer for 18 minutes, covered.
Do not peek — if your pan doesn’t have a glass lid, and you’re not sure if the heat under it is right, carefully listen to it. Remove from heat and let sit for 6 minutes without opening it. Then fluff with a fork and serve.
