Pressure Cooker Chicken Printable Version of this Recipe

 

So simple and good that I rarely cook chicken any other way.  The chicken is very tender and moist.  Great for chicken salad, chicken enchiladas, or snacking, etc. 

Ingredients:

  • 1 whole chicken
  • 1/2 onion quartered
  • 1 lemon/lime
  • 1 tablespoon Sazon Completa (or seasoning of your choice...sometimes I use lemon & dill, sometimes just pepper & season salt). 
  • 1 cup water

Put all ingredients into your cooker and bring cooker to pressure.  Turn to low and cook for 18 minutes (all pressure cookers are different so you may have to play with the time a little bit).  Release pressure and remove chicken to cool.

De-bone and use as desired.
