Baked Cheese Grits

  • 3 cups  Cooked grits 6 oz. - 1 1/2 cups Cheddar cheese, shredded
  • 2 large Eggs, beaten
  • 1 1/2 cups Evaporated milk
  • 2 tbls Butter, melted
  • 1/2 tsp Salt
  • 1/4 tsp Paprika
  • 1/8 tsp Red pepper, ground

Heat oven to 375.  Grease twelve 3-inch muffin-pan cups.  In large bowl, stir together all ingredients until mixed.  Divide mixture evenly in tin.

Bake 25-30 minutes or just until firm.  Cool grits 10 minutes.  To serve, invert pan and transfer to plates. 

Great item for a brunch.
