hottest drink in Key west ... Thane likes this drink so much that I bought a mint plant and keep it on the boat. Mint plant update: sadly the mint plant has died after being accidentally watered with vodka.

Lightly muddle mint leaves and lime in a tall glass. Cover with simple syrup or sugar and fill glass with ice. Add rum and club soda; stir well. Garnish glass with lime wedge and springs of mint.
Making simple syrup:
2 parts sugar to 3 parts water. Mix sugar well with hot water until dissolved. Stores well in a closed container for several weeks.
Side note: I like to use lots more rum and lots less club soda...way more better! Simple syrup is much better than sugar.
