Bacon Wrapped Stuffed Jalapenos

Contributed by:  Kimber Dean, m/v Quam Bonum

Kimber made this recipe for our Sunset Marina Relay For Life Cocktails For A Cure fundraiser and it was THE hit of the party.  Not a single jalapeno left.

Ingredients:

  • 8 large fresh jalapenos, sliced in half, membrane removed (leave some for heat if you want)
  • 1 package Cream cheese
  • 4 pieces bacon, cut in half
  • Toothpicks
  • Disposable gloves are recommended when handling the jalapenos.

Directions:

Cut jalapenos in half and remove seeds & membrane.  Stuff cheese into peppers.  Wrap bacon around jalapeno and secure with a toothpick.

Bake for 25 to 30 minutes in a 400 oven till bacon is crisp and golden brown.
