I received an email from my friend Hal the other
day telling me about the Pambazos he found
during one of his visits to San Miguel, Mexico. Hal is a
fantastic chef & always ready to try something new in the
kitchen.
He shared a few photos of the women cooking Pambazos in an inverted "sombrero" cooker called a comal. The enchilada and the red sauce is in the "crown" depression and they drag everything through it and then finish around the "brim."
This set me on a mission to learn a bit more about making the Pambazo sauce. So here we go ... let's make a Pambazo ... yum!
