Penny's Chicken Casserole
My Flower Mound Girls Club gets together every year at Christmas to celebrate
our friendship. Penny came up with this dish and we love it! It
would also be a great way to use left over turkey.

1 chicken/turkey cooked and deboned (or 4 chicken breasts)
1 package spaghetti cooked in the chicken broth drained and set aside
1 onion, chopped
1/2 green pepper, chopped
2 ribs of celery, chopped
1 can cream of mushroom soup
2 cans cream of chicken soup
1/2 stick butter
1 can diced tomatoes
1 cup or more cheddar cheese
Salt & pepper to taste
Sauté onion, pepper & celery in 1/2 stick of butter. Mix together chopped
chicken, onion, pepper, celery, tomatoes, soup and spaghetti with some of the
chicken broth. Add salt & pepper to taste.
Spoon into buttered casserole, sprinkle grated cheddar cheese on top. Bake
20-30 minutes until cheese melts @ 350°. |
